Scotch Eggs Strider

  • 8 hard boiled eggs (peeled)
  • 1 egg beaten (to use as wash)
  • 1 lb sage-flavored sausage (Jimmy Dean Brand works well)
  • 1 teaspoon parsley
  • pinch of thyme
  • Flour seasoned with salt and pepper
  • Seasoned bread crumbs

Mix the sausage parsley and thyme together. With the sausage meat, make 8 patties large enough to surround the 8 hard boiled eggs. Place and egg in the center of each patty and form the sausage around the egg. Roll the egg in the salt and pepper seasoned flour, then in the beaten egg, and then in bread crumbs. Fry in oil.

I don't remember how much oil I used the last time I made these but if you need to know the amount, let me know and I will be more than happy to make them again just to find out.
